Since 2011 we’ve been firm believers in the benefits of syphon coffee since we took it on as our brew method of choice in our café The Hall. This is a fun, visually impressive way to brew really great tasting coffee at home and it’s a lot simpler than it looks. Originally based on Cona's Coffee Syphon dating back to the 1920's, this modern version uses a cloth or paper filter to give a slightly cleaner mouthfeel.
Syphon coffee combines total immersion and percolation brewing. This means it’s really easy to achieve an even extraction whilst tailoring each brew to your desired strength.
Recipe
Add 250ml of water off the boil to the lower bowl and heat with the meths burner.
Assemble cloth filter and attach to the upper bowl. Place the upper bowl into lower bowl then seal when the chain starts to bubble.
When all the water has risen to the top chamber add 15g of coffee ground for filter, give it a good stir and let it do its thing.
After 2 minutes take the heat away, stir once and let the coffee fall back into the lower bowl. Decant into cups directly from the lower bowl.
